Gramma Ersilia’s Rosemary Potatoes
Getting Gramma Ersilia’s (she became “Elsie” in America) recipes wasn’t always easy. She kept her secrets well guarded. Eventually—let’s not talk about how—I was able to get a few. This one is my favorite.
Ingredients:
4 whole potatoes, cut into full-length wedges with skin on
2 Tbsp olive oil
2 Tbsp rosemary, roughly chopped
1 Tbsp smashed whole garlic or garlic oil (I use garlic purée)
¼ tsp salt
¼ tsp pepper
Procedure:
Preheat oven to 400°F. In large mixing bowl, add potato wedges. Toss in olive oil, then add the remaining seasonings. Add potatoes to baking sheet. Cook 30–40 minutes, tossing occasionally until crispy on the outside but soft on the inside. Broil for a short time to make them extra crispy.
TIP: Sprinkle extra olive oil on the potatoes before roasting—that was Elsie’s trick!
